Is it just me or is it really tricky trying to meet everyone’s needs and expectations while trying all the while to be eco-friendly, politically correct, gainfully employed, fit, happy and sober all at the same time???
It’s on the days when life overwhelms that dinner needs to be quick, delicious and easy. I admit to being a lazy cook, we have to eat, but I just want to go to bed, even if it is just 5 o’clock. I have a repertoire of satisfying and healthy options, like Vegetarian Curry in a Hurry. It’s a stupid name, but it’s fast and it’s good, and even better the next day.
This dish make me feel better about things; it maybe be chaos around me, but I can still feed the people I care about.
Vegetarian Curry in a Hurry
1 tbsp. butter and 1 tbsp. olive oil
1 medium onion, chopped fine
2 minced gloves of garlic
2 tsp. curry powder (I use Lalleys)
1 carrot, peeled and diced fine
1 celery stalk, diced fine
1/2 cup water
1 large can (28 oz.) diced tomatoes with their juice
1 large can (19 oz.) lentils, drained
salt and pepper to taste
In a medium saucepan over medium heat combine butter and oil, when melted, add onion, carrots, and celery. Saute, stirring for about 3 or 4 minutes. Add minced garlic and curry powder, saute for an additional 3 or 4 minutes. Add water and simmer uncovered until most of the liquid has been absorbed, about 5 minutes. Add tomatoes and lentils, salt and pepper to taste and cook for about 10 minutes or until heated through. Serve with rice, couscous or on its own.
